Earthquake Nachos
What you’ll need:
*Corn Queso
- 10 ounces of queso fresco
- 1/4 cup milk
- 6oz shredded cheddar cheese
- 1 15oz. can of rotel
- 8oz. of corn
- 3 tbsp of corn starch
- 1 tbsp adobo
*Nachos
- Hot Sauce of Choice (Blue Ghoul or Kickass Cilantro recommended)
- 8oz shredded Monterey jack
- 1 cup of pickled jalapenos
- 6 oz. shredded chicken
- 1 10 oz. bag of preferred Tortilla Chips
- 1)Preheat oven to 400°
- 2) In a sauce pan combine Queso Fresco, Cheddar, Milk, and Rotel, cook on medium high for 10 minutes.
- 3)Whisk sauce to blend cheeses and reduce heat to medium low, add corn, adobo, and corn starch, cover and simmer for 15-20 minutes, stirring frequently
- 4)Scatter bag of tortilla chips on a foil lined baking sheet and top with shredded Monterey Jack.
- 5) Bake for 7-10 minutes or until cheese is melted
- 6)Top with corn queso, pickled jalapeno's, shredded chicken, and garnish with your favorite hot sauce
