Earthquake Nachos

What you’ll need:

*Corn Queso

  • 10 ounces of queso fresco
  • 1/4 cup milk
  • 6oz shredded cheddar cheese
  • 1 15oz. can of rotel
  • 8oz. of corn
  • 3 tbsp of corn starch
  • 1 tbsp adobo

*Nachos

  • Hot Sauce of Choice (Blue Ghoul or Kickass Cilantro recommended)
  • 8oz shredded Monterey jack
  • 1 cup of pickled jalapenos
  • 6 oz. shredded chicken
  • 1 10 oz. bag of preferred Tortilla Chips
  • 1)Preheat oven to 400°
  • 2) In a sauce pan combine Queso Fresco, Cheddar, Milk, and Rotel, cook on medium high for 10 minutes.
  • 3)Whisk sauce to blend cheeses and reduce heat to medium low, add corn, adobo, and corn starch, cover and simmer for 15-20 minutes, stirring frequently
  • 4)Scatter bag of tortilla chips on a foil lined baking sheet and top with shredded Monterey Jack.
  • 5) Bake for 7-10 minutes or until cheese is melted
  • 6)Top with corn queso, pickled jalapeno's, shredded chicken, and garnish with your favorite hot sauce
